Having grown up in NY, bagels on the west coast have been mostly disappointing. We are so lucky to have true NY style bagels come to Olympia! The way I judge a bagel is how it tastes untoasted. The best bagels crunch on the outside and have a chewy interior. 6th Borough bagels exceed my NY bagel snob expectations!

The Bagels
These are the real deal — made with organic flour, boiled in water infused with malted barley, and baked on burlap boards in stone deck ovens. We make our bagels the traditional way in order to bring a little taste of NYC to OLY.

The Lore
Legend has it that New York City's bagels—famously challenging to recreate elsewhere—are so unique because of the particular concentration of minerals in the city's water. But Oly locals know that our water is really something special, too. And that could very well be why these New York style bagels work so well right here in Olympia, Washington.
